Applications of Citric Acid
Citric acid as an edible acid is one of the most important organic acids used in
various industries, particularly food and pharmaceutical industries. Its applica-
tion in the food industry is more than 75%, pharmaceutics around 10%, chemi-
cals 9%, leather 3%, cosmetics 2% and other industries 1% .
Citric acid can be used in food industry such as beverage production, jelly, des-
sert, canned products, chocolate, sugar candies, juices, ice cream, biscuits,
cakes, home made sweets and cookies, marmalade, jams and artificial gums. In
addition, in pharmaceutical and cosmetics such as various kinds of softeners,
blood storage, detergents, producing ointments and cremes, cosmetics, and
antiseptics and cleaning agents are also used. Furthermore, this acid is also ap-
plied for polishing the textile and fabric colors, cleaning the surface of the fab-
rics and fibers, effervescent salts, Acidifiers, antioxidants, etc .
